Course Description
In this course, you will:
- Discover the unique properties of Pasta Madre
- Learn how to incorporate it into sourdough loaf baking
- Master the intricate, multi-stage process of making Panettone
Whether it’s your first Panettone or your tenth, this class will elevate your understanding of fermentation, dough development, and Italian baking traditions.

Ms Pauline Chan has acquired her skills in cake decorating, cookie art food design through a series of professional qualifiations and personal improvisation. She works with other companies to give public demonstration where she demonstrates the usage of their kitchen appliances and equipment and also showcases her culinary skills

Foundations & Sourdough Applications
- Requirements for converting sourdough starter into Pasta Madre
- Understanding the function of Pasta Madre in both sourdough and Panettone
- Making sourdough with PM: No-fold technique, traditional fold method, folding with inclusions (e.g. fruits, nuts)
- Baking logistics: timing, proofing, shaping, and oven prep
- Preparing orange paste – a key Panettone component
- Panettone Demo: step-by-step loaf-making process
- Advanced learners: Bring your loaf home to bake
Sessions 3 & 4
Panettone Deep Dive
(Includes group work for Panettone and individual hands-on for chocolate Panettone loaf)
- Preparing and maintaining Pasta Madre
- Full Panettone process breakdown: Part 1–4: Ingredient prep, fermentation, mixing, shaping, and baking
- Hands-on session: Chocolate Panettone Loaf (Please bring your own loaf tin)

Mandatory Requirement:
Completion of Pauline’s Basic Sourdough Course is required for enrolment.
Strongly Recommended:
Learners who have also completed both the Basic Sourdough and Sourdough Brioche courses will benefit most from the advanced techniques covered in this class.

Participants who do not meet the prerequisites will be removed from the class.
