Take your sourdough journey to the next level in this intermediate workshop designed for learners who wish to deepen their understanding of sourdough techniques and expand their repertoire of artisan bakes. Through a combination of hands-on practice, demonstrations, and collaborative learning, participants will gain greater confidence in handling sourdough doughs with varying textures, hydration levels, and shaping methods.
In Session 1, participants will make sourdough shio-pan through a guided hands-on activity, while also exploring sourdough waffles through demonstration and group learning. The session will also cover the preparation of a classic sourdough loaf, including shaping, proofing, scoring, and baking techniques.
Session 2 focuses on more advanced applications with hands-on preparation of sourdough bagels and sourdough personal pizzas. Participants will learn how dough fermentation, flour selection, hydration, and environmental conditions influence texture, flavour, and baking performance.

Trainer Profile
Ms Pauline Chan has acquired her skills in cake decorating, cookie art food design through a series of professional qualifications and personal improvisation. She works with other companies to give public demonstration where she demonstrates the usage of their kitchen appliances and equipment and also showcases her culinary skills

This course is not suitable for beginners.
