Course Outline

Criteria : This class require learner to attend Pauline’s Sourdough Basic. Not suitable for beginner. This class is a continuous session from Sourdough Basic in NUSS NSA Course.

Session 1

  • Practicum: How to handle high hydration dough?
  • Sourdough Focaccia (group of 2 learners practicum)
  • Focaccia with toppings
  • Focaccia with meat & cheese
  • THEORY: FLOUR TYPES SUITABLE TO USE IN THE RECIPE

Session 2

  • Sourdough Ciabatta
  • Sourdough Pizza base

Learning Outcome

  • Technique and Skill in High Hydration Sourdough
  • Understand the Timing and Requirements to Bake a Focaccia/Ciabatta with Open Crumbs
  • Pizza Hand Stretch Technique
  • Bread Protein and Environment Control

Trainer Profile

Ms Pauline Chan has acquired her skills in cake decorating, cookie art food design through a series of professional qualifiations and personal improvisation. She works with other companies to give public demonstration where she demonstrates the usage of their kitchen appliances and equipment and also showcases her culinary skills
